We will make an Italian cocktail "Bellini" from dry sparkling wine and peach puree according to the recipe of my friend and chef Izequil Barbuto, prepare a hot appetizer of bell peppers that will whet your appetite a little, and serve chicken liver with peaches and green salad mix for the second , which usually drives female taste buds crazy.

It is advisable to do all three recipes in parallel, but if you are not confident in your abilities, cook as convenient for you. And by the way, let it happen before her eyes. It will turn out: you will receive applause, somewhere something will turn out not as it was intended - there will be something to laugh at!

So men (and possibly ladies), let's get started! And let's start with a cocktail, so that your darling's appetite will play out a little, she relaxed a little and stopped rushing for the stove, because today the place there is already taken!

Bellini cocktail

For a cocktail (4 glasses that way) you will need:

  • a bottle of Prosecco or other dry sparkling wine,
  • a jar of canned peaches with syrup,
  • strawberries for decoration (optional).

So, open the peaches, drain the syrup, and put a few halves in a blender cup.

Beat the peaches with a blender, spooning in the syrup until you get a thick puree.

Put 3-4 teaspoons of mashed potatoes in a wine glass and gently spoon the prosecco into the glass.

If you want to decorate your cocktail, cut the strawberry in half and decorate the glass!

Hand the cocktail to your sweetheart, take a couple of sips yourself, and slowly move on to the pepper snack. The recipe is very simple and delicious. It is magical both hot and cold. While you are cooking, you can tell us that for this recipe it is best to take peppers grown in our strip. Their taste is more pronounced, their skin is thinner and, it seems to me, that it is softer.

Pepper appetizer.

For cooking you will need:

  • 4 bell peppers
  • 1-2 cloves of garlic
  • 2 tablespoons olive oil
  • salt and black pepper to taste

Heat the oven to 180 degrees. Wash the pepper, and as the oven warms up, put it there and bake until the peel on the pepper starts to "bubble". It will take you 10-15 minutes.

Take it out, let it cool slightly and peel it off with a knife. Do this carefully so that the pepper remains intact if possible, otherwise all the juice that has formed inside it will leak out, and this is the most delicious.

Place the peppers on a plate and peel the garlic. Place it on a board, crush it with a knife and cut it into smaller pieces.

Sprinkle the garlic on top of the pepper, season with a little salt and olive oil.

Serve it with a second glass of Bellini.

Chicken liver with peaches and arugula.

You need the following ingredients:

  • 2 peaches or nectarines (but peach is better)
  • 350-400 grams of chicken liver,
  • a jar of apricot or peach jam or jam (we need 2-3 tablespoons of it),
  • a bag of ready-made salad mix according to your taste (for example, I like arugula and corn)
  • salt to taste
  • balsamic vinegar to taste
  • 2-3 tablespoons of olive oil.

Peel the liver from films and cut into equal, but rather large pieces. The liver should look like the photo below.

We heat two pans, pour oil into one of them, and leave the other dry. In the one with butter, throw in the liver and fry it for 5-7 minutes. It should feel a little bouncy when you press down on it with your finger. Try cutting one piece. Inside, it should be on the edge. That is, there should be no blood, but transparent "juice" should stand out

While the liver is cooking, cut the peaches into wedges. Each peach can be cut into 6-8 pieces. Put the peaches in a dry frying pan and fry a little.

In the meantime, remove the salad from the bag, wash and leave it in a strainer or colander to drain the excess water. Then take the jam and add 2-3 tablespoons to the liver. Season with salt.

Stir the liver and simmer it for another 2-3 minutes. While it is stewing, take out the salad and place it in a deep plate, add a little oil and stir.

Place the salad in the center of the plate.

Remove the liver from the stove. Spread it with the peaches.

Sprinkle a little balsamic vinegar on top.

  • pork (brisket or ham) - 600 g;
  • onion - 1 piece;
  • shallots - 1 piece;
  • garlic - 1 clove;
  • vegetable oil - 1 tablespoon;
  • liquid honey - 75 ml;
  • red wine - 25 ml;
  • mustard - ½ tablespoon;
  • soy sauce - 1 tablespoon;
  • chili sauce - ½ teaspoon (optional);
  • salt and black pepper - to your liking.

Preparation

  1. Wash the pork, dry it and rub on all sides with salt and ground pepper.
  2. Peel the onion, wash and cut into 5-6 circles.
  3. Take a baking dish, put onion mugs on the bottom and pour in some water. Place the meat on top, close the mold tightly with culinary foil and send it to the oven, heated to 150 degrees, for 1-1.5 hours.
  4. Peel, wash and chop the shallots and garlic. Heat vegetable oil in a skillet and fry the onion and garlic in it. When the onion is soft and transparent, pour in the wine and let it boil. Let it simmer for a minute, then add soy sauce with honey and mustard (add chili sauce as you like). Stir everything and let it simmer over low heat for 10-15 minutes.
  5. Strain the resulting honey glaze, but do not throw away the soft onions with garlic. Now take the meat out of the oven, open the foil, brush it on all sides with the garlic and onion remaining after straining. Drizzle the third part of the frosting over the pork, cover again with foil and send back to the oven for 20 minutes.
  6. Remove the meat again and open the foil, pour another third part of the glaze, close and put in the oven for another 20 minutes.
  7. Take the dish out of the oven for the last time, remove the foil completely, pour over the rest of the icing and bake for another 20 minutes.
  8. Let the cooked meat rest for 5-10 minutes, cut and serve.

Preparation:

Meat rolls with bell pepper a simple recipe


We need:

  • 350 g beef (shoulder)
  • 2 pieces of red bell pepper
  • 2 cm ginger root
  • 1 lemon
  • 3 stalks of green onions
  • 55 ml vegetable oil
  • 5 g salt
  • 1 tbsp Sahara
  • 1/2 tsp ground black pepper

For the sauce:

  • 1 clove of garlic
  • 1 cup (250 g) soy sauce
  • 1 tbsp apple cider vinegar
  • grated ginger

For decoration:

  • 2 medium tomatoes
  • 2 fresh cucumbers
  • a couple of lettuce leaves

Preparation:

  1. Cut the meat into slices 1 cm thick. Take a piece, cover with cling film, and beat it with a hammer from the middle to the edges. And so is all the meat.


To thinly cut meat, you need to freeze it slightly

2. Squeeze the juice from half a lemon.

3. Ginger is peeled and grated on a fine grater.

4. Cooking marinade: you need to mix lemon juice, 1/2 part grated ginger, 2 tsp. salt, 1/4 tsp. ground black pepper, vegetable oil.

5. Put the meat into the finished marinade, massage it and leave it for 10-15 minutes to marinate. Take out and dry with a paper towel.

6. Peel the bell pepper from the stalk and from the white membranes, cut into strips 0.5 cm thick. Put in a pan with butter, fry. Fry the peppers for 3-4 minutes, until half cooked. Then put it on a paper towel and cool.


7. Cooking sauce: Pour the soy sauce into a saucepan. To it we add a clove of garlic squeezed through a garlic, apple cider vinegar and the remaining ginger, mix everything and put on fire. From the moment the mixture boils, cook for 2 minutes. Remove from heat and cool.

Strain the sauce so that you don't come across pieces of ginger and garlic.

8. Put a frying pan on the stove and grease it with oil.

9. In green onions, cut off the white part, and fill the feathers with boiling water, then transfer to cold water. This is to keep the feathers soft and not discolored.


10. We form rolls. We take beaten and pickled meat. On a piece of meat, put four strips of bell pepper on the side so that the ends look out from both sides, and wrap it in a roll. We tie it with a feather of an onion, cut off the excess. And so is all the meat.


Fry in a pan until golden brown.

11. Put the finished rolls on a paper towel, cool.


12. Before serving, pour the rolls with sauce. On the lettuce leaves, spread the tomato and cucumber cut into rings.

Original meat in cheese batter


We need:

  • 500 g pork
  • 4 cloves of garlic or finely grated, onion
  • 100 g hard cheese
  • 2 eggs
  • 50 g butter
  • flour for breading
  • salt, pepper to taste
  • vegetable oil for frying
  • 1 lemon

Preparation:

1.Pork chopped across the fibers, like on cue balls, is beaten through cling film. Salt, pepper and roll in flour.

2. Squeezed garlic, coat the meat.

3. Grated cheese on a fine grater, beat with eggs. We got a cheese batter.

4. Heat the oil in a frying pan.

5. Dip the chopped pork in cheese batter, again brew in flour and put in the pan. Fry until golden brown.

For the second breading of meat, you can use bread crumbs instead of flour.

6. On a greased baking sheet, spread the meat and sprinkle with lemon juice. Put, on each piece, a little butter, and in a preheated oven at 180 degrees, brought to readiness. Keep in the oven for 8-10 minutes.

7. Serve with vegetables.

Smoked brisket with nuts and prunes


We need:

  • 300 g smoked brisket, wider
  • 100 g hard cheese
  • 50 g pitted prunes
  • 200 g walnuts, coarsely chopped
  • wooden skewers

Preparation:

  1. Cut the cheese into rectangles, the width of the brisket.

2. Cut the prunes into strips.

3. Cut off a slice of brisket. We put cheese, prune nuts.

The filling can be any, for example: strips of pickled cucumber and boiled carrots; hard cheese and dried apricots.

If the brisket is not very wide, wrap it diagonally, placing the filling closer to the inner edge.

4. Wrap with a roll and fasten with a skewer.

5. We bake in the oven at 180 degrees, 5-10 minutes, or in the microwave - 2-3 minutes.

Romantic dinner - "Veal with cherries" dish


We need:

  • 700 g veal
  • 1/3 cup pitted cherries (can be in their own juice or frozen)
  • 1/3 cup cherry juice
  • 2 tbsp butter
  • cinnamon, salt and pepper to taste
  • 1 tbsp starch

Preparation:

  1. In washed and dried meat, we make punctures along the fibers.
  2. Salt the meat and stuff (in punctures) with cherries.


3. Put meat in a container, pour with butter, sprinkle with cinnamon, pour 1/2 cup of water or broth. We put in the oven for 25 minutes. Temperature 180 degrees.

4. Then take out, pour cherry juice on the meat, sprinkle lightly with flour and simmer for another 30 minutes until tender.

5. Served ready-made meat, cut in portions, with stewed sauce. To do this, drain the sauce and mix with 1 tbsp. starch to thicken.

Minced meat balls tasty and fast

The meatballs are very tasty, and if you do not know where they are made, then you will not distinguish from the meatballs. It turns out tasty and fast.


We need:

  • 500 g of any minced meat
  • 2 eggs
  • 5 tbsp breading flour
  • vegetable oil for frying
  • salt, pepper to taste
  • a pinch of dry Provencal herbs (optional)

Preparation:

  1. Salt and pepper the minced meat to taste. We beat it off (we take it in our hand and throw it into a bowl). Minced meat should be elastic, not liquid. If we see that the minced meat is "floating", we need to drain the water and add 1/2 tablespoon of bread crumbs.

Eggs are not added to the minced meat!

2. Break eggs into a bowl and beat lightly

3. Pour flour into a plate.

4. Prepare water to wet your hands.

5. Put the pan with oil to warm up.

6. Take minced meat with a moistened spoon and form balls with wet hands. We also moisten the board with water. We form balls from the balls no more than 1 cm thick.


7. Using a spatula, transfer into flour, roll on both sides. We transfer the ball into the eggs and dip it on both sides. Put it in the pan. Fry for 2-3 minutes on each side, until golden brown.


Remove excess fat on a paper towel.

8. Serve with any side dish or vegetables.

Of course, a glass of good wine will be an excellent addition to your snacks.

Dessert

Fruit in chocolate


We need:

  • 500 g strawberries (bananas, tangerines, etc.)
  • 1 bar of dark chocolate
  • 1 white chocolate bar
  • 200 g of any nuts (coconut flakes)
  • toothpicks

Preparation:

  1. Grind the nuts in a blender.
  2. The strawberries should be well washed and dried with a paper towel.
  3. Chop each chocolate individually and melt in a steam-water bath. We put on the fire a pan with a larger diameter than the one in which we will melt the chocolate, with water, when the water boils, put a pan with chocolate in it. And while stirring, melt the chocolate.

It is very important that the chocolate pan does not come into contact with the water.

4. Then, dress the strawberries, from the side of the tail, on a toothpick and gently dip them in chocolate.

Let the excess chocolate drain. Then - in nuts and on a dish covered with parchment paper. May be sprinkled with coconut.


5. We do this with all the strawberries, alternately changing the chocolate. You can also make a drawing on dark chocolate - white, or vice versa. As your fantasy tells you. To solidify the chocolate, place it in the refrigerator for 10-15 minutes.


6. Also, we can do with other fruits: bananas (cut them into pieces of 5 cm, or half), mandarin slices, orange, apples.
